Some restaurants begin with a business plan. Sahtein began with a week in Beirut.

Late last year, Hunter Street Hospitality CEO Frank Tucker and Culinary Director Santiago Aristizabal travelled through Lebanese capital, sharing meals everywhere from celebrated restaurants to neighbourhood favourites. They weren’t searching for dishes to recreate, but for the spirit that makes Lebanese hospitality unlike anywhere else.

They found it around every table.

Bread arrived before it was asked for. The table quickly filled with dips, pickles and small gestures of generosity. Plates were shared, conversations stretched long into the evening, and every guest was welcomed like family.

That feeling became the foundation for Sahtein.

Before the menu was finalised, Frank invited members of Sydney’s Lebanese community to experience the restaurant first. Their feedback helped shape everything from the menu to the way guests are welcomed.

“We wanted Sahtein to feel generous in every sense,” Frank says. “Welcoming in how it’s experienced, approachable in how it’s priced, and somewhere people want to return to again and again.”

That generosity lives throughout the restaurant today. Fresh bread, house-made dips and pickles are a constant presence on the table as the meal unfolds. Every dish is designed to be shared, every ingredient is halal, and every service is guided by the belief that great hospitality means making people feel at home.

Led by Executive Chef Mike Flood, Head Chef Rifat Katranci and Culinary Director Santiago Aristizabal, the team doesn’t attempt to recreate Beirut. Instead, it captures the warmth, generosity and spirit that make the city so memorable.
