Tailor Room Named One of Australia’s Best Cocktail Bars Less Than a Year After Opening

Tailor Room opened on Argyle Street in April 2025, in the historic Argyle Stores building. By February 2026, international bar trade publication Coqtail had included it in their list of the best cocktail bars in Australia. The list spans Sydney and Melbourne, sits alongside venues featured in The World’s 50 Best Bars, and covers the full breadth of Australian cocktail culture. Tailor Room made it before its first birthday.

What Coqtail Recognised

Coqtail noted that the bar’s “world-class team of bartenders channels deep expertise into drinks that tell a story.” That story runs through a ten-cocktail menu called Textures, where each drink is named after a fabric and built around what it feels like as much as what it tastes like. Coqtail described it as “a sartorial tasting journey, crafted and experienced like a bespoke suit.”

The concept is specific enough to be memorable and executed precisely enough to earn international attention within months of opening.

The Preparation Behind It

In the Textures menu, each cocktail in the series is a considered original. The Velvet, No. 7 on the menu, was published in full by Australian Bartender in March 2026 — a milk stout purée measured in grams, blended with mezcal, apricot brandy and coconut rum, churned with sparkling wine before serving. The level of preparation helps explain how a bar less than a year old lands on an international list.
