Yunnan sits in China’s far south-west, sharing borders with Myanmar, Laos and Vietnam. Its landscape runs from tropical lowlands to high plateaus; its population encompasses dozens of ethnic communities.

 

That makes “Yunnan cuisine” less a single tradition than a collection of them. The flavours change as the landscape does, but certain ideas return: freshness, fragrance, sourness, and of course, chilli.

Sour, hot and fragrant

Yunnan uses chilli, but heat is only part of the equation.

 

In the province’s tropical south, Dai cooking brings it together with lime, fresh herbs, garlic and ginger. Mint and lemongrass appear where diners might expect dried spices. Sourness is used to sharpen a dish, while herbs keep its flavours bright and distinct.

 

The result can feel closer to the food of neighbouring Southeast Asia than the cooking of northern China. Geography becomes flavour: centuries of movement and exchange carried ingredients and techniques across borders long before those borders took their present shape.

A kingdom of fungi

Yunnan is home to around 250 varieties of wild edible mushroom, including porcini, matsutake, termite mushroom and bamboo fungus.

 

Many appear only with the rains and are gathered from forests rather than cultivated. Their brief season determines when they are cooked, sold and eaten.

 

This abundance has shaped a cuisine that pays close attention to the character of each mushroom. Some are grilled or fried. Others flavour broths and hotpots. The method changes, but the ingredient remains unmistakably itself.
