Know Your Pasta Shapes

Twists, tubes, ridges, ribbons. Italian pasta comes in hundreds of shapes. And while they may catch the eye, but each one is designed to catch something else: sauce.
Linguine carries a light seafood sauce without weighing it down. The rough-cut edges of Spaghetti alla Chitarra hold onto rich crab bisque. Penne catches spicy arrabbiata in every tube, while Rigatoni’s ridges are perfect for dishes slow-cooked lamb ragù.
Then there are the shapes designed to cradle every last bit of sauce: pillowy gnocchi with brown butter and pumpkin, and folded Radiatori with rich white beef ragù.
It’s a simple Italian philosophy: pair the right pasta with the right sauce, and both taste better. You’ll find that thinking across our winter menu.
A shape-by-shape guide to our menu
Osso Bucco Raviolini wraps veal in delicate parcels, served in a rich tomato broth. Risotto ai Funghi brings roasted mushrooms and porcini together in a dish worth taking your time over. And when the whole famiglia is gathered, our generous Family Table pastas bring everyone into the fold.
Whatever the shape, it starts the same way at Fratelli Fresh: rolled fresh by hand every morning. We believe the best pasta doesn’t just hold the sauce. It brings the whole dish together.
